Spinach Artichoke Casserole

Serves 6 / Prep time: 10 minutes / Cook time: 4 to 6 hours on low / 2 to 3 hours on high

Remember that spinach artichoke dip that everyone loves so much at holiday parties? This recipe takes those flavors, lowers the carbs by including cauliflower and zucchini, and turns it into a delicious main-course casserole.

Cooking spray

10 ounces fresh spinach, chopped

1 (15-ounce) can artichoke hearts, drained and chopped

2 cups chopped cauliflower

½ cup diced zucchini

2 cups shredded part-skim mozzarella cheese

8 ounces low-fat cream cheese, cut into small pieces if in brick form

1 cup whole-milk Greek yogurt

⅓ cup grated Parmesan cheese

2 garlic cloves, minced

½ teaspoon salt

½ teaspoon freshly ground black pepper

1.Coat a slow cooker generously with cooking spray.

2.Add the spinach, artichoke hearts, cauliflower, zucchini, mozzarella, cream cheese, yogurt, Parmesan, garlic, salt, and pepper to the slow cooker. Stir to mix well.

3.Cook on low for 4 to 6 hours or on high for 2 to 3 hours.

Substitution tip: Make this recipe without the cauliflower and zucchini and serve it as a dip at your next potluck. Cut the cauliflower into florets and cut the zucchini into sticks, and use them as the dippers.
